Did you say green salad? Why stop at green? Although green is THE compulsory colour on our plates at all times, we love a rainbow. With mixed elements of raw and roasted vegetables, it will accompany your summer barbecues perfectly and provide a useful nutrient dense and balanced option for your vegetarian friends.

A great way to make the most of the asparagus season. If the short asparagus season is over then substitute with broccolini. I have been enjoying this for lunch recently. The portion is a hearty one, but after a dog walk and a session at the gym I feel I deserve it!

chorizo & mustard lentils

These French Puy Lentils are a staple in my house just as they were in my Grand mother's kitchen in Burgundy growing up. Quick and easy to prepare, they don't need to soak and cook in just 20 minutes. They are a great protein packed alternative to meat, rice or potatoes and are incredibly versatile, enjoyed hot or cold as a base for a salad. Chorizo and Dijon mustard is our favourite way to cook them, but get creative with them and enjoy!

wild rice salad

Wild rice makes a gorgeous looking salad, perfect for a weekend lunch or part of a buffet or barbecue spread. If eating on its own then try adding some feta cheese, sardines or wild salmon for some added protein. It's also a great salad to take into work or as part of a picnic.

caulirice salad

This salad uses cauliflower rather than a grain or rice to create a substantial salad that can be eaten on its own or added to a buffet table of other salads. It's best not made the night before as cauliflower when cut and left produces a sulphur smell. If you do store in the fridge make sure it's got a lid on!

creamy roasted tomato soup

This soup is so easy to make and a real family favourite in the Autumn when the days get colder. It’s my daughter’s favourite soup and a great way to add veggies into a reluctant vegetable eater’s diet. It’s creamy from the butterbeans so is dairy free, as well as including protein to keep you feeling fuller for longer.

beetroot & carrot salad

This salad is really quick and easy to make and, with the vibrant colours, it’s packed full of antioxidants. You could make it the night before and take into work for lunch with maybe a tin of sardines, some chicken or some feta cheese for added protein.
