high protein asian salmon salad

A high protein Asian inspired salad which is super easy to prepare and cook. I cook my salmon in the air fryer as it is done in minutes - but you can cook the salmon in the oven if you prefer.

 

ingredients

serves 2

 

1 tbsp rice vinegar
1 tbsp tamari (or soy sauce)
1 1/2 tbsp sesame oil
2 salmon fillets
2 large handfuls salad leaves
1/2 cucumber, sliced or cut into ribbons
150g edamame beans (frozen)
4 large radish, sliced
2 spring onions, sliced
2 tsp sesame seeds

 

method

prep time: 15 mins

 
  • Cook the salmon fillets. You can do this in an air frier, oven or fry on a hob with 1/2 tbsp of the sesame oil.

  • Combine the rice vinegar, 1 tbsp of sesame oil and the tamari (soy sauce) in a small bowl and whisk to combine.

  • Cook the edamame beans as per packet instructions.

  • Place the salad leaves on top plates.

  • Top with the cooked salmon.

  • Arrange the edamame beans, cucumber, spring onions and radish around the salmon.

  • Drizzle with the dressing and sprinkle sesame seeds on top.
