Cauliflower & red lentil one pot

A brand new vegetarian one-pot so quick to make and so delicious for the colder evenings! Both cauliflower and lentils are very budget friendly ingredients and full of great nutrients. For those in need of a greater amount of protein I would serve this with grilled chicken or salmon.
So so simple and very tasty.

 

Ingredients

Serves 4

 

1 cauliflower, cleaned and cut into florets
1 onion, chopped
2 carrots, diced
5 cloves of garlic, sliced
2 tablespoons olive oil
1 teaspoon cumin seeds
1 teaspoon sweet smoked paprika
1 teaspoon ground coriander
Large handful of cherry tomatoes, sliced
800ml Vegetable stock
175g dry red lentils, rinsed
2 tablespoon of harissa paste or tomato purée
1 tablespoon tamari sauce
1 tablespoon greek yoghurt

 

Method

 
  • In a large saucepan, fry the onion with the olive oil until soft and brown.

  • Add the carrots and garlic and spices and fry for about 5 minutes

  • Add the cauliflower, cherry tomatoes and fry for a further 2 minutes.

  • Add the stock and lentils plus the harissa paste, tamari and simmer (lid on) on a low to medium heat for 15-20minutes until the lentils are tender.

  • Stir in a large spoonful or 2 of Greek yoghurt to serve .

  • Add a sprinkle of chilli flakes if you fancy a little kick.

Cauliflower is such a versatile and budget friendly vegetable.
Red lentils are high in potassium, fibre, folate, and polyphenols. They are good source of plant based protein.
