Cheesy broccoli and white bean soup
This high protein broccoli soup is delicious! Adding protein to your soups is essential to keep you full and this includes protein from the chicken stock, white beans, cottage cheese and feta making it super filling. It contains 31g of protein per serving and a whopping 19.5g fibre all for 405k/cal.
ingredients
serves 3
1 tbsp olive oil
1 large onion, red or white
3 cloves garlic, crushed
1 large head of broccoli (350g), chopped
500ml chicken broth/stock
700g jar of white beans
100g baby spinach
chilli flakes
100g feta cheese
100g cottage cheese
method
In a large pan heat the olive oil.
Add the onion and cook for 5 minutes until soft.
Add garlic and the chopped broccoli stalk and cook for 5 more minutes.
Add the broccoli florets, the broth/stock and the jar of white beans. If you use good quality white beans you can add the stock from the jar.
Season with large pinch of chilli flakes and a good grind of black pepper.
Simmer for 15 minutes until the broccoli is soft.
Add the spinach, feta cheese and cottage cheese.
Blend to preferred texture.
Season with a little extra chilli flakes if you like more of a kick.
