Korean ground beef & rice bowl
This ground beef recipe has become a favourite in my house. The Korean flavours are so good without being spicy at all, unless you also make the sauce! This is easy to batch cook or at least make an extra portion or two for the next day. The rest of the bowl can be changed with the season and whatever you feel like or need. A fried egg on top is a favourite extra for me.
Ingredients
Serves 4
GROUND BEEF SAUCE
1/4 cup tamari sauce (4 tbsp)
2 tbsp brown sugar
1.5 tbsp rice wine
1/2 tbsp minced garlic
1/2 tbsp minced ginger
Ground black pepper
1/2 tbsp toasted sesame oil
GROUND BEEF BOWL
Drizzle of olive oil
750g beef mince
1 red bell pepper, sliced or chopped
1 tbsp toasted sesame seeds to garnish
5-6 spring onions , thinly sliced
TO SERVE
Rice of your choice (e.g. basmati rice, jasmine rice, brown rice)
Avocado , sliced
Broccoli , steamed or air fried with some garlic
I also suggest:
Cucumber , thinly sliced
Radish , thinly sliced
Asparagus , pan fried
Top with a fried egg
Kimchi
SPICY SAUCE (OPTIONAL)
2 tbsp gochujang paste (Korean chili paste)
1 tbsp toasted sesame oil
1 tbsp water
1 tbsp toasted sesame seeds
1 tsp rice vinegar
1 tsp minced garlic
Method
Combine all ingredients for the ground beef sauce in a medium size bowl and whisk well. Set aside. If planning to make the spicy sauce, combine all the sauce ingredients in a separate bowl and set aside.
Cook rice according to instructions, and set aside.
In a well heated pan, cook the ground beef over medium high heat until the meat mostly turns brown (about 3- 4 mins). Stir often while breaking clumps of the meat.
Add the chopped red pepper, half the chopped spring onions, stir and cook for another 2 mins.
Pour the ground beef sauce over the meat and simmer for 2-3 mins, while stirring occasionally. Add the sesame seeds. Stir around quickly. Remove from the heat.
Serve the cooked beef over a bed of cooked rice along with your choice of sides and drizzle over the sauce.
