Sesame chicken and all the greens

This is a real family favourite. You can mix up the greens to whatever the family enjoy. It’s also super quick and easy. It’s high in protein with a chicken breast per serving. The edamame beans will also add a little more protein. I feel it doesn’t need any extra carbs - but you could serve with a little brown rice if needed.

 

ingredients

serves 4

 

4 chicken breasts, cut into bite-sized pieces
1 tablespoon cornflour
1 tablespoon olive oil
Large handful of frozen peas
large handful of frozen edamame beans
1 broccoli head, finely shredded into small pieces
1 leek, halved lengthwise and sliced
1 large courgette, halved lengthwise and sliced
1/2 spring cabbage, finely sliced
2 tablespoon sesame seeds

For the sauce
2 tablespoon soy sauce
2 tablespoon maple syrup
1 tsp crushed chilli flakes
1 tablespoon apple cider vinegar
2 teaspoon sesame oil
1 heaped tablespoon of grated ginger

 

method

prep time: 30 mins

 
  • Toss the chicken pieces with the cornflour in a medium bowl.

  • Add the peas and edamame beans to a small bowl and top with boiling water.

  • Heat the olive oil in a large non-stick frying pan over a high heat. Add the chicken pieces and cook, stirring, until no longer pink.

  • Mix together the dressing ingredients into a small bowl, then pour into the chicken pan along with the drained peas and edamame beans.

  • Stir over a medium heat until the sauce has thickened slightly, then tip out into a bowl, or set aside and use another pan for the veg.

  • To cook the greens heat the same pan (or use a new one) and add all the greens - broccoli, leeks, courgette and spring cabbage. Cook until they retain a crunch, but have cooked down a bit.

  • Serve the greens with the chicken and a sprinkle of sesame seeds to each bowl.

  • If you need more carbs you could also serve with some brown rice.

 

the health boost tip

This is a great way to get some greens into your diet. You can use whatever greens you have and mix and match. Kale, calvo nero or savoy cabbage all work well too. You could also replace the broccoli with cauliflower.
