Lentil, beetroot & salmon salad bowl

The beauty of this lentil salad is its versatility! Some elements (lentils and salmon) can be added warm, and all can be made ahead or already in the fridge and cupboard so you can assemble this beautiful salad at the last minute. It makes a perfect starter for 4 or a balanced lunch for 2. The lentils and salmon provide a good source of protein and healthy fats to keep you full for longer. This can be made with any type of lentil - but I think those beluga lentils are perfect and sturdy for this salad. Second favourite to use are Puy lentils.

I love a salad. In the spring and summer I make sure I have one at least one a day and in the winter I just warm up a few of the ingredients to make a warm salad. To stop myself getting bored I am always changing the ingredients. My salads are never boring with just lettuce and cucumber - I make sure I pack them with lots of delicious vegetables. They are always colourful and contain at least four different vegetables or herbs.

Beetroot and chickpeas are one of my favourite combo in a summer salad but this time I decided to team them up in a winter warmer with a taste of Morocco! I eat a salad nearly every day for lunch and so am always trying to come up with different varieties. This one has been a favourite for a couple of weeks now. It can be made in advance and taken into work as a packed lunch. This can be made with any type of lentil - but I particularly love the nutty flavour and firm texture of the dark speckled lentils.

When the weather gets warmer we love nothing better than a smoothie for breakfast. It's light and refreshing. The problem with many of the smoothies or smoothie mixes from the freezer you can buy from supermarkets is they are really high in fruit not vegetables and there's no protein to keep you full. This has protein from the chia seeds, healthy fat from the flaxseed and a good mix of vegetables with a touch of sweet from the mango.

Heart disease is unfortunately still on the rise and is still the leading cause of death for both men and women in the world. Nutritionally there is much that you can do to protect yourself and since prevention is invariably better than cure it’s time to protect your heart.

I enjoyed my very first falafel on a family trip to Israel as a teenager. Served very spicy with mixed salad, in a flat bread. As a chickpea fan, I naturally love them and I enjoy playing around with ingredients, flavours and colours. This beetroot falafel is not just pretty, it's quick and easy to make, healthy, packed with whole ingredients, ideal to make ahead and really filling.  If you've never tried them, have a go!

Yogurt, raspberry, beetroot energy breakfast

The sun's finally coming out to play, all my favourite berries are also coming into season so it's time to play with those gorgeous colours and make healthy food look pretty and attractive to young and not so young! Offering a yoghurt and a few fruits to the kids for breakfast or dessert is great but they get bored! Choose a nice glass, cup or jar, and get creative with some nutritious layers!
