Butternut and black bean spicy one-pot

This recipe is for all of you out there who like a simple tasty one pot that keeps on giving! We all need those one-pot recipes in our busy lives. Simple, yet delicious heart warming, ideal to prep in advance and…packed full of vegetables, plant based protein, fibres and all round goodness. Leave the chorizo out for a vegetarian option. Delicious served with a warm corn tortilla wrap, mashed avocado and soured cream.

Simple braised French Puy lentils

In an effort to simplify good home cooked family food without compromising on taste or essential nutrients, having a few recipes for versatile delicious sides is key. This is a dish I used to make with my grand mother as a child in France. She used to serve it with Toulouse sausages, or roast chicken. Should you have leftovers( I doubt it unless you save yourself a portion) I have found that cold the next day it makes a delicious salad, topped with crumbled feta.

Packed with great fibres, vitamins and health boosting spices this heart warming soup makes a great starter or one pot supper . Soups are one of the best "batch cooking" meal to make ahead and freeze. Great healthy option for busy family lives.

Puy lentils with chorizo and Dijon mustard

These French Puy Lentils are a staple in my house just as they were in my Grand mother's kitchen in Burgundy growing up. Quick and easy to prepare, they don't need to soak and cook in just 20 minutes. They are a great protein packed alternative to meat, rice or potatoes and are incredibly versatile, enjoyed hot or cold as a base for a salad. Chorizo and Dijon mustard is our favourite way to cook them, but get creative with them and enjoy!
