Creamy avocado green dressing

A creamy, dairy free avocado salad dressing that pairs well with a salad or as a side to roasted vegetables. The chilli flakes provides zing so feel free to add more if you like it particularly zingy! You could also serve with grilled chicken or fish.

 

ingredients

 

1/2 avocado
Large handful of fresh coriander, chopped
1 lime, juiced
50ml extra virgin olive oil
pinch of salt
pinch of chilli flakes

 

method

 
  • Add all the ingredients to a small food processor and blend until smooth.

  • To make a little runnier add a drizzle of water until desired consistency.

  • Use immediately or store in an airtight container for up to 2 days.
