Cauliflower curry & homemade flatbread

This is a spicy vegetarian curry that will warm your soul as well as body. It’s packed with plenty of turmeric which has amazing health benefits (see tip below). We have served with a homemade naan bread. They are so quick and easy to make and once you have tried you won’t ever buy shop bought again. The recipe for the naan/flatbread is not unique, but we have become huge fans of making them and getting our kids to make them too. They also make great pizza bases.

 

ingredients

serves 3

 

1 tablespoon olive oil
1 onion, chopped
200g peeled and chopped butternut squash
4cm piece of ginger, peeled
1 red chilli
2 tsp ground turmeric
75g red lentils
900ml vegetable stock
1 cauliflower
1 large handful of kale leaves, finely chopped.

Naan/Flatbread
200g plain flour (gluten free or normal)
200g plain or Greek yoghurt (or dairy free yoghurt)
2 tsp baking powder
1 tsp salt
optional: cumin or nigella seeds

method

prep time: 45 mins

 
  • Heat the oil in a large pan and cook the onion over a gentle heat with a pinch of salt for 8-10 minutes.

  • Add the butternut squash, the red chilli, ginger and turmeric and stir well.

  • Add the red lentils and 600ml of the stock.

  • Leave to simmer for about 20 minutes until the squash is soft.

  • Add the remaining 300ml of stock along with the cauliflower and leave for a final 10 minutes, adding the kale after 5 minutes.

  • Serve alongside the naan/flatbreads.

Naan/Flatbread

  • While the curry is cooking you can make the naan/flatbreads.

  • Place all the ingredients in a bowl and stir. If you are using gluten free flour you might need a little more or less yoghurt depending on brand.

  • Use your hands now to knead in the bowl and bring all the ingredients together. If doesn’t need much kneading just a minute to bring it all together.

  • When it’s smooth turn out onto a floured surface. Cut the ball into 4 and roll each ball thinly.

  • When rolled, place in a dry frying pan over a hot heat, flipping after a few minutes. I usually roll the next one while the other is cooking.

Turmeric has amazing health benefits from preventing bowel cancer, helping with dementia, chronic pain syndromes and inflammatory conditions. It’s best taken as a whole spice in food where absorption is better than a supplement.
