French healthy 5 minute sardine pâté

If you want a tasty, budget friendly 5 minute recipe which is also brain boosting, look no further. This is perfect for children who love the taste of tinned sardines. This quick sardine pâté recipe is packed with omega-3 fatty acids and the ideal savoury healthy snack or delicious as part of a summer lunch spread, served with toasted bread, carrot sticks or oat crackers.

 

ingredients
serves 2-4

 

About 200g sardines in olive oil ( my favourite is French brand Parmentier)
1 tablespoon Dijon mustard (I like to use Maille, from my home town)
1 tablespoon butter
Juice of half a lemon (add more later if needed)
Salt and ground black pepper
To serve: chopped parsley or spring onions or chive

method
prep time: 5 mins

 
  • I used a food processor for a smooth texture but this can also be made just by mashing with a fork.

  • In the food processor, add the sardines, including the very fine bones and whizz.

  • Add the mustard, butter and lemon juice and whiz again until well combined.

  • Season well with salt and freshly ground black pepper.

  • Squeeze over extra lemon juice if needed.

  • To serve, garnish with some chopped spring onions, chive or fresh parsley.

Prepare and leave in the centre of the table for the whole family to snack on with sticks of carrot, peppers, cucumber or toasted pitta bread, while you are getting the main meal ready.
