Berries & coconut nice cream

That sweet taste of summer... Yes I am talking berries and ice cream combination in any way possible!! Except that this ice cream has no milk! It’s the power of the humble banana striking again. We always have bananas in my house, fresh in the fruit bowl for those quick energy refuel moments. I also usually have some sliced frozen bananas in my freezer to add to smoothies or make this nice cream. Once you’ve done this one…do experiment with your favourite flavours!

Lemon & ginger energy snack

Not another snack requiring NO BAKING… said no-one ever! Whenever we are invited to talk at an event, be it a wellness event, nutrition talk or workshop at a school it seems most families struggle with choosing healthy snacks. They are not always necessary or even recommended, but when trying to manage a busy schedule and aspiring to a healthier regime it is really important to have the right balance of nutritious and flavoursome ingredients to keep us going. These snacks taste just like lemon drizzle cake!

When temperatures soar and everyone suddenly fancies an ice cream, turn your smoothies into those amazing ice popsicles. The flavour combination is inspired by the gorgeous Kent cherries abundant in July and August, and the memories of the classic British Bakewell tart!

These new raw healthy snacks were inspired by the arrival of all the gorgeous summer fruits. Naturally gluten free, light and fresh they are the perfect pick-me up, on-the-go refuel for the longer days, late outdoors training session or delayed never ending cricket matches! They are pretty, do not need baking and set in the freezer quickly, so what's not to like!

At the Health Boost we love a green pesto. Spring and summer provide us with amazing green herbs, leaves and shoots and the greatest opportunities to experiment with green pesto. A homemade pesto is a great base for a bright and zingy salad dressing if you add olive oil and the juice of a lemon. As a make ahead and refrigerate item, it will become your best friend for a last minute delicious meal. Spoon some on top of a salmon fillet or chicken thighs before sliding in the oven and serve with a side salad.

Adding beetroot to a chocolate cake is certainly not new, it goes so well and makes the cake lovely and moist. These cakes are gluten free, grain free, dairy free and, with only a little maple syrup, almost guilt free. The cacao powder is rich in magnesium and antioxidants so they could almost be called good for you! They are certainly a much better alternative than any processed shop bought sweet treat! Delicious served with a cup of herbal tea.

At The Health Boost, we are foodies and passionate about good food to be enjoyed with our friends and family. And who doesn't enjoy a nice cookie! As always, we try and keep it free from nasties and rich in the good stuff. Including lavender flowers into the cookie dough has transformed those little thumb print cookies into real taste buds adventures. Don't get bored, be bold with food !

With all the talk and noise about snacking or not snacking, government guidelines not always suitable for all, what to do? As busy mums to active sporty kids, we prefer to make sure that if our children need to refuel between meals, we make nutrient dense homemade snacks available. These energy balls are nut-free too, so can be taken to school or the local sports club. And for those who like a strong boost, add extra turmeric, go on!!

These are a healthy and gluten free alternative to the frozen fish finger. By making them yourself you can be confident on the quality of the fish and ensure there's no added nasties. Many fish fingers from supermarkets are coated in unhealthy oils, which have no place in our diet. Serve with a side of sweet potato fries and a couple of green vegetables as a perfect balanced meal. If your child is suspicious of 'green bits' then leave the parsley out!

At The Health Boost, Kat and I aim to thrive on a balanced lifestyle including lots of good real food, being as active as possible in the time we have, so treats do feature there somewhere. This is one of those treats! Delicious, nutritious and a little naughty! Coconut is a bit of favourite ingredient of mine and luckily it offers many health benefits aside from tasting delicious.

Christmas is the time of indulgence and we love the taste and smell of gingerbread in our house at this time of year. Here we have created a muffin/cake with the taste of Christmas, but have tried to keep it healthy while still being indulgent. We have used black molasses which is a by-product of refined sugar. However unlike sugar, which has no nutritional benefit, molasses contain minerals and iron. It is also absorbed slower so you don't get the blood sugar crash that refined sugar gives you.

I started experimenting with raw food a while back now and always find new inspiration for energy balls, adjusting flavours and ingredients to suit seasons, moods and hectic family diaries. In order to satisfy that festive spiced biscuit craving and still provide the much needed post workout fuel or after-school sport these cranberry and mixed spice balls do the trick. And the level of spice can be adjusted to suit younger or more mature eaters equally.

A French classic from my childhood revisited.
Growing up in France, the school pick up snack was a big deal, and it still is of course. For me, it was quite often a couple of slices of “Pain d’épice”. It is a very simple bread to make,  full of the winter warming flavours of honey and spices such as ginger, nutmeg and cinnamon. It is fantastic crowd pleaser with a cuppa during the cold season.

Because life is all about balance and enjoying real good food, I decided to give the classic muffin a little Health Boost twist. The kids requested two different flavours – Lemon and poppyseed and choc-orange. I accepted the challenge and this recipe is for 12 light and fluffy muffins – 6 of each flavour. I have used ground almonds instead of flour and raw honey as the sweetener.

Healthy snack bars are very hard to find and can sometimes be deemed healthy or advertised as such but beware! When possible, we try and make a batch on a Saturday or Sunday to get us through the hectic schedule of after school sport. Packed with essential fats and protein, gluten free and with no refined sugar, they will keep you going steadily for longer.

These energy balls were inspired by, or should I say, commissioned by my Sweaty Betty team mates! They have been designed to be free from most of what we try to avoid or reduce and full of the flavour of that much loved coffee shot! They are a perfect made ahead item and were a massive instant hit at our Monthly meeting!

French cherry clafoutis

Reworking childhood recipes with a healthier twist is one of my favourite kitchen challenge. I strongly believe in enjoying old fashioned foods. French classics such as clafoutis are delicious, seasonal and the opposite of fussy. Try this no refined sugar, gluten and dairy free version and share with the family this summer!

When my kids were little, as most toddlers do, they went through a phase of refusing everything green added to their plate. Shock horror! My way round it was to add Green Pesto to their pasta. From then on, pesto, was always going to be homemade. Over the years, I have made green pesto and red pesto alike. It is so easy and delicious. Pick and choose the vegetables you enjoy, pick and mix the nuts and have fun creating....and eating of course! This is my favourite Mediterranean combination.

As a busy working active mum of two sporty energetic kids, even with all the organisation in the world, refuelling sometime has to happen in the car between school and evening activities, for them and for me! So I have become quite creative with my flavours to keep things fun. With mint in abundance in my garden, I was inspired.
