Asian inspired omelette with prawns

If you’re after a simple high protein meal, this asian inspired omelette with prawns is the easiest most fabulous lunch or brunch for 2, or even a quick midweek dinner. All the flavours of Asian cooking and packed with nourishing protein and portions of veggies! Serve with a side salad, stir fried pack choi or brown rice if higher carbs needed.

 

ingredients

serves 2

 

4 large eggs (28g protein)
150g cooked king Prawns (27g protein)
1 red pepper, sliced
Bunch spring onions, sliced
150g beansprouts
1 tbsp soy sauce
1 tbsp fish sauce
1 tsp lemongrass paste
Olive oil
1 tsp toasted sesame oil
Juice of half a lime

To serve:
Fresh red chillis, sliced
Handful coriander leaves

method

prep time: 10mins
cook time: 15mins

 
  • Beat the eggs, soy sauce and sesame oil together

  • Heat a little olive oil in a large frying pan over high heat

  • Add the red peppers and stir fry for 2 mins

  • Add beansprouts and cook for another 2 mins

  • Add prawns, spring onions and stir until prawns are warm

  • Finally, add fish sauce, lemon grass paste, a lime juice and cook for another minute or so

  • Take off the heat, cover and set aside

  • In same pan or another, heat a little olive oil

  • Add the egg mixture

  • Cook until set

  • Halve and slide onto 2 serving plates

  • Add stir fried prawns and veg to top the omelettes

  • Scatter with coriander leaves and fresh chilli slices

    Serve on its own for breakfast or with a side salad or brown rice for brunch/lunch

 

the health boost

2 eggs do not provide enough protein for a meal, so the addition of prawns is ideal.
Beansprouts have a fabulous nutritional profile.
Red peppers are rich in vitamin C.
