Berries & coconut nice cream

That sweet taste of summer... Yes I am talking berries and ice cream combination in any way possible!! Except that this ice cream has no milk! It’s the power of the humble banana striking again. We always have bananas in my house, fresh in the fruit bowl for those quick energy refuel moments. I also usually have some sliced frozen bananas in my freezer to add to smoothies or make this nice cream. Once you’ve done this one…do experiment with your favourite flavours!

This can be prepared ahead, presented as a salad, or served as a topping for a summery tart. The flavours will transport you to a sunny mediterranean destination!

chicken & pea curry

This is one of those quick and easy meals that can be rustled up when nothing else is planned. Apart from the chicken fillets, the other ingredients are probably already in your cupboards. The recipe below uses chicken fillets as they cook quickly. However this can also be made with chicken breasts cut in strips, just make sure they are cooked through before serving.

vegetable tagine

This tagine serves a delicious spicy punch. Not one for little ones unless adventurous! A great vegetarian meal that packs in lots of different vegetables. Can be made ahead and reheated and leftovers are perfect for lunch the next day. Delicious served on its own, but if you are super hungry then serve with brown rice, quinoa or some cauliflower rice. Don't be put off by the long list of ingredients - the spice paste is ever so easy to make!

This is perfect for introducing your children to spices. It's not that hot, so I add a couple of dried chillies when I cook it for some extra heat. If your children aren't used to spices then don't add any chillies the first time you make it and then introduce gradually. Don't be put off by the long list of spices it's a very simple dish and the oven does the hard work!

asparagus & feta frittata

When you love asparagus, the season is not really long enough, so I really try and come up with new recipes to include them at least a couple of times a week. This new recipe could very quickly become a seasonal staple for my family. It is quick to prepare, nutritionally balanced, can be adapted, can be eaten hot or cold, makes a perfect picnic or lunchbox item and when cut into squares it's a great finger food for the younger ones. What are you waiting for? 

half-time shake

Sometime, a beautiful purple, green or yellow smoothie is not going to do the job! 3 years  ago I embarked on a fairly long journey to convince my pre-teen Rugby mad son that I could make him a healthy, nutritious and energy boosting shake to take to rugby training rather than him bowing down to the peer pressure of gulping a fluorescent blue or orange energy drink! Today, I can happily report that I have now been making this shake every Sunday morning for the past 18 months and it is always happily consumed entirely!

carrot, apple & ginger flapjacks

These flapjacks were inspired by my daughter’s love of carrot, apple and ginger juice. The carrot and apple make them naturally sweet so there’s no refined sugar in these flapjacks, although I have used some maple syrup to sweeten further. We always try and add vegetables to as many of our dishes as possible and these flapjacks are a perfect example. Perfect for summer picnics or after school treats.
