Berry cheesecake chia breakfast pot

ingredients

30g chia seeds
100ml unsweetened almond milk (we like Plenish brand)
150g Greek yoghurt (look for 10g of protein per 100g)
100g cottage cheese
10g shelled hemp seeds
100g fresh or frozen raspberries
0.5 tsp vanilla extract (optional)
method
Combine the chia seeds and almond milk in your pot or jar. Stir well to prevent clumping. Cover and refrigerate for at least 2 hours, or overnight, until the chia seeds have absorbed the liquid and formed a thick gel.
In a bowl, whisk together the Greek yoghurt and cottage cheese until smooth and combined. Stir in vanilla extract (optional) if using.
If using frozen raspberries, allow to thaw fully (or blitz in microwave). Gently crush about half of the raspberries with a fork. Leave the remaining raspberries whole for texture.
When the chia seed layer is set add the cottage cheese and yoghurt layer and spoon over the raspberry layer.
Sprinkle the shelled hemp seeds on top just before serving. Add the whole raspberries on top to finish.
You can keep refrigerated for up to 24 hours (add hemp seeds fresh).

Hemp seeds are a brilliant but often overlooked source of plant-based protein — three tablespoons gives you around 10g. They're also rich in omega-3 fatty acids which are particularly important for women going through the menopause to support heart health, brain function and reducing inflammation.
