Overnight mango chia breakfast pots

Creating good breakfast habits is often a very hard one to crack! Making ahead is one of the best advice we can give. Those overnight chia breakfast pots take 5 minutes to prepare the day before, keep in the fridge for 2-3 days, are rich in protein to keep you full and can be made with an endless list of fruits! What’s not to like! You can easily make a “pick & mix” batch to suit everyone in the family! Any fresh or frozen fruit can be used! Today’s choice is frozen mango!

 

ingredients

makes 3 breakfast pots

 

1/2 cup chia seeds
1 tablespoon Maple syrup
420ml Unsweetened almond milk (or milk of choice)
Frozen mango, thawed (or your choice of fruit)
A few seeds or chopped nuts for topping

method

 
  • In a medium bowl add the chia seeds, almond milk and maple syrup and whisk well

  • Leave to stand for about 30minutes. The mixture should thicken as the seeds absorb the liquid.

  • In 3 jam jars or equivalent, start layering with the chia mixture first.

  • Add a layer of fruit

  • Then add another layer of chia mixture

  • Finish by topping with extra chopped fruits, seeds and chopped nuts if using

  • Secure the lid on

  • Store in the fridge overnight

Keeps in the fridge for up to 5 days.

the health boost tip

Fresh fruits can be added as they are as a layer.
If using frozen fruit, thaw prior to layering or as I love to do, warm them up as well (in a pan or microwave) to form a jam like layer!
Chia seeds are a great source of protein to keep you full for longer.
