When the weather gets warmer we love nothing better than a smoothie for breakfast. This smoothie is deliciously creamy due to the addition of avocado and banana. Suitable for children - the first time I made this my daughter drank most of it! There is some protein from the avocado, but not much, so if you want to drink on its own then you might want to add a few nuts. I often like a smoothie post run and then I’ll have lunch a few hours later.
These are so tasty that even my husband who has decided he doesn’t like sweet potatoes loves them! And for him to go back for seconds on a veggie dish is high praise indeed! They could be served for breakfast with a poached egg on top or alongside a green salad for lunch. For most people 3-4 rosti would be enough for lunch – although my husband did eat 6 the first time I cooked these for him!!
With busy lives and early starts breakfast can sometimes fall by the way side. We are great fans of breakfast - as we feel that if you start your day with a decent meal - then you are more likely to keep on track. I want to call this a good friend in the kitchen, a real multi-tasker to make ahead. Rhubarb and ginger are amazing together. This is such an easy simple sample to make in winter, especially with the ginger coming through. It stores really well in a mason jar in the fridge. Everyone loves it in my house. It’s delicious with a warm porridge, perfect with greek yoghurt and nuts and makes the ideal base for a crumble. A keeper for sure.

I could not offer a more simple, balanced, delicious make ahead breakfast than this one! I wasn't even sure I was going to write this as a "recipe". But at The Health Boost we are passionate about simple real whole foods and ingredients. Being healthy does not require fancy ingredients and long winded fussy recipes. You've all heard the saying "breakfast like a king". However the typical Western diet breakfast of cereal with skimmed milk or a piece of toast grabbed on the way out of the door is not eating like a king. I understand that time is a particular worry when you're trying to get to work and ferry children to school. However I often find that cooking a breakfast for the children results in cleaner plates much quicker and we are usually out of the door earlier. The key is to get the children involved. Get them to stir the eggs, while you unload the dishwasher or do their hair! My husband leaves the house at a ridiculous hour of the morning so he takes his breakfast in, which he eats after his 8am meeting. Many of the breakfasts below are easily portable in a container and carried into work.
