Mocha overnight oat and chia pot
You know by now we love a breakfast pot that can be prepared the night before and hits our protein and fibre requirements. This coffee and cacao pot does just that and more. With 30g of protein per pot and 14g fibre which is nearly half your daily recommended amount this will keep you going until lunch. All for only 430k/cal. For those of us also counting our calcium for our bones this pot contains 375mg of calcium.
ingredients
serves 1
40g oats
2 tbsp chia seeds
1 tbsp shelled hemp seeds
1 shot of coffee - single or double your choice
1tsp vanilla extract
1 heaped tsp cacao powder
125g unsweetened almond milk
150g Greek yoghurt ( I used 0%)
1 tsp ground cinnamon to sprinkle (optional)
method
Mix the oats, chia seeds, cacao powder in a bowl and add the almond milk, vanilla and coffee shot. and stir to combine.
Place the mixture in a jar and leave overnight.
In the morning top with the Greek yogurt and a sprinkle of ground cinnamon.
If feeling fancy you could also sprinkle some coconut chips on top.
