Matcha chia protein breakfast pot
For all the matcha lovers out there, this is the latest version of one of our high protein chia pudding breakfast pots. It hits all the usual essentials – kefir yoghurt for protein and gut health and chia, pumpkin, sunflower seeds for fibre. Blueberries because we love them and they are so good for us. A nourishing breakfast for us busy and strong midlife women.
ingredients
serves 1
30g chia seeds
100ml unsweetened almond milk (we like Plenish brand)
2 serving scoops of Energy by Matcha Fuel or other high grade matcha
1/2 tsp vanilla extract
250g pot of Kefir Protein (Biotiful is the brand and pot contains 30g protein)
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
2 tbsp fresh or frozen blueberries
method
First add the almond milk, vanilla and matcha and whiz until combined and frothy.
Then combine with the chia seeds. Whisk well to prevent clumping. Cover and refrigerate for about 2 hours, until the chia seeds have absorbed the liquid.
Once chia pudding is set, top with kefir yoghurt.
Add all the toppings: blueberries, pumpkin seeds and sunflower seeds.
You can keep refrigerated for up to 24 hours.
PS: you can also make extra chia mixture and keep in the fridge to make another pot the next day.
