Strawberry cheesecake baked oats
This Strawberry cheesecake protein baked oats taste like cake for breakfast but is packed with protein and nutrients. An easy make-ahead breakfast perfect for meal prep, freezer friendly, and great if you don’t love overnight oats. Kids will love it and it’s perfect to take on the go. Top with extra greek yoghurt for a high protein option.
ingredients
Oat Base
180g oats
220g cottage cheese
2 eggs
240ml milk
2 scoops protein powder of choice
1 teaspoon baking powder
1 teaspoon vanilla extract
2-3 tablespoons honey or maple syrup (optional)
Cheesecake Swirl
2 tablespoons good quality cream cheese
2 tablespoons Greek yogurt
1-2 tablespoons honey or maple syrup
Toppings
250g chopped strawberries
Handful of shelled pistachios
method
Prep time: 10mins
Cook time: 30mins
Preheat oven to 190 and prepare an 8×8 baking dish.
Add oats, cottage cheese, eggs, milk, protein powder, baking powder, vanilla, and honey to a blender. Blend until completely smooth.
Pour batter into prepared baking dish.
Scatter chopped strawberries over the top.
In a small bowl, mix cream cheese, Greek yogurt, and honey until smooth.
Drop spoonfuls of the cheesecake mixture over the batter and gently swirl with a knife.
Bake for 30–35 minutes, until the centre is set.
Let cool slightly, then slice into 6 servings.
Great for breakfast with extra greek yoghurt and fruits and seeds and nuts. Also a really good snack for kids of all ages!
