Coconut, almond and nut butter snacks

Nut allergy sufferers stay away! I’m afraid these slices are made almost entirely from nuts in natural, butter, oil and flour form. This kind of snack is my absolute heaven. I love nuts, all of them and I love a sweet and salty treat. However, I would recommend moderation as they are very calorie dense. They are gluten free, packed with good fats and contain no refined sugar so much better than any of the shop bought industrial plastic wrapped processed snack you can buy on the high street. Sure to satisfy a sweet craving without the nasty ingredients!

There are many many versions of these types of snacks you could make, but this is a good place to start…Build the confidence and change up the ingredients to suit your tastebuds and what’s in your cupboards! This recipe requires very few ingredients, no food processor involved so minimal washing up…10 mins to make, 30 minutes to set in the fridge and they’re ready to go! What more can you ask for from a delicious cheeky snack!

Slightly indulgent in sweetness but full of fruity goodness, spelt wholesomeness and cinnamon warmth, those muffins are such a comforting treat after a long dog walk teamed up with a hot drink, a log fire and the papers maybe!

Butternut and black bean spicy one-pot

This recipe is for all of you out there who like a simple tasty one pot that keeps on giving! We all need those one-pot recipes in our busy lives. Simple, yet delicious heart warming, ideal to prep in advance and…packed full of vegetables, plant based protein, fibres and all round goodness. Leave the chorizo out for a vegetarian option. Delicious served with a warm corn tortilla wrap, mashed avocado and soured cream.

Slow cooked venison winter stew

Nothing beats a stew when the shorter darker cooler days arrive. It is not only delicious, warming and comforting, it is also so simple and a real time saver. I chose venison from our local farm and butcher for this recipe. Being wild and grass fed, venison is much leaner than beef, and contains less saturated fat. Diced venison from your local butcher is also very affordable. We have used a slow cooker to cook this dish, which means that you can prepare it all in the morning and then get on with the day coming home to a perfectly cooked meal. For a conventional oven place in a low oven for 4 hours until the meat is tender.

Smokey winter one-pot

This recipe is for all of you out there with foodie families and those who enjoy entertaining! We all need those One-Pot recipes in our repertoire. With a busy hectic family life, managing time and meal planning is tricky. That's where your AGA or like me a “Crockpot” slow-cooker is a saviour several times a week. This shoulder of lamb is quick and easy to prepare first thing in the morning and will welcome you in the evening with warming spiced aromas and a healthy hearty family meal ready to serve, and hopefully leftovers for lunch the next day.

Gluten free no flour zesty muffins

Because life is all about balance and enjoying real good food, I decided to give the classic muffin a little Health Boost twist. The kids requested two different flavours – Lemon and poppyseed and choc-orange. I accepted the challenge and this recipe is for 12 light and fluffy muffins – 6 of each flavour. I have used ground almonds instead of flour and raw honey as the sweetener.
